Strawberry & Coconut Milk Pops
Of course EM runs screaming away from actual strawberries, but begs for these. Just fresh strawberries, a small tin of lite coconut cream & a couple of teaspoons of caster sugar blitzed in the blender.
Found these neat ice block molds at Target - there is a straw in the bottom so you can suck up the melted bits. Also optimum hand melty protection!

I will keep my eyes out for when these molds appear again - took a while to find and they get bought up quickly.
